Monday Meals- Easy Lima Beans

Hey all,

My newest recipe comes from allrecipes.com and it is so easy and so tasty I'm sure it will become a favorite.
This is the only way I cook lima beans now.



EASY LIMA BEANS

Approximately 1.5 lbs frozen lima beans- 
1 can chicken broth.

Pour lima beans into medium sauce pan, cover with chicken broth- add water if needed to finish covering. Cook on medium heat at simmer until done, usually 45-60 minutes. Stirring occasionally to make sure the beans cook evenly.

Monday Meals- Onion Casserole

Hi all, I realize Monday Meals is being posted on Tuesday. It's not a typo, just procrastinating.

So without further ado, here's my recipe for ONION CASSEROLE. I found it on allrecipes.com. It makes and excellent side dish and it always gone by the next day.




5 large sweet onions- cut and seperated
1/4 C. butter
1/4 C. sour cream
3/4 C. parmesan cheese
10-15 smashed butter crackers (I use Ritz and the kids always love to help with
this part.)

Saute onions in butter until tender. Turn off heat, stir in sour cream and parmesan cheese. Transfer to greased dish. Top with smashed crackers. Cook at 350* for 30 minutes- until bubbly and brown.

Monday Meals- Easy Banana Pudding

A staple of southern living, a dish that has graced many a table top, a dessert that needs no introduction...

I bring you the Easy Banana Pudding- also known as "Angela's Banana Pudding" by Patsy Weekly (not me Angela, but another).

This recipe can be found in an old Perdido Baptist Church Cookbook.

My copy, with its torn and folded pages reside in a cabinet beside my pots and pans and is pulled out each time a grocery list is made (at least once a week) and is where all the recipes I've gathered over the years have been written.

So without further ado you'll need- "1 box of Vanilla wafers, 1 small box of instant Vanilla pudding, 5 or 6 bananas, and 1 12- oz. Cool Whip.

Mix Vanilla pudding as directed on package. Fold in Cool Whip. Layer Vanilla wafers, bananas, and pudding mixture in this order. Makes 2 or 3 layers according to size of bowl. Top with crushed Vanilla Wafers."
